
Coastal Macaroni Cheese
Ingredients:
250g/9oz macaroni
40g/1.5 oz butter
40g/1.5 oz plain flour
600ml/1 pint 1.5 fl oz whole milk
300g/11oz grated Coastal Cheddar
salt & pepper to taste
add onions & bacon if desired
Method:
- Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.
- Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.
- Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.
- Meanwhile, preheat the grill to hot.
- Remove the sauce from the hot, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.
- Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.
- Sprinkle over the remaining cheddar and and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.
Toasted Applewood Cheddar
A king of sandwiches! Top with your favourite pickle to serve.

Ingredients:
1 loaf Ciabatta bread
1 tbsp extra virgin olive oil
2 tbsp mayonnaise light
1 red skinned apple, cored and thinly sliced
100g/4oz wafer thin honey roast ham
200g/7oz Applewood smoked cheddar cheese
Thinly sliced pickle to serve
Method:
- Preheat the grill to medium hot.
- Slice the ciabatta in half horizontally then in half again (to give 4).
- Brush with olive oil then grill until golden and slightly crispy.
- Spread a little mayonnaise over each toasted ciabatta now top with
a mixture of apple slices wafer thin ham and cheddar slices.
- Return to the grill for 2 minutes until cheese just begins to melt and
serve hot topped with a spoonful of your favourite pickle.
